1/2 cucumber

2 cups kale
1 peeled lime
1 cup swiss chard
1/2 peeled lemon
Run all ingredients through a juicer and pour into a 4-ounce glass

Sip this juice with a meal.

Don’t drink it quickly.

Sip!

Always sip it with a meal.

This will decrease the chance of spiking insulin…

And throwing you out of ketosis.

“Then I wake and I’m hungry again.”

I hear this often.

This cycle is caused by low blood sugar…

Followed by high blood sugar…

Followed by low blood sugar…

This will cause weight gain.

And if you are middle-aged…

You don’t have the fat burning hormones you used to…

STEP ONE
At this point in our program, you know what to eat.
You’ve been eating 3 meals a day with approximately 5 hours between breakfast and lunch…

And another 5 hours between lunch and dinner…

Today, I want to teach you when you should really eat…

How to eat…

And how much to eat.

Americans have been taught to eat three meals a day, breakfast, lunch and dinner.

Since most of you had no problem with this…

I did not break that belief system during the first phase of our program.

It’s wrong.

Nearly all of us have learned to eat according to the American school and work schedule…

Not our bodies’ schedule.

As you know every summer we take in foreign exchange students.

THEY HAVE NOT BEEN TAUGHT TO EAT THIS WAY!

Very rarely, are they overweight.

If we were taught what I am about to teach you…

We would probably not have the obesity problem we have in America.

Let’s begin!

Look at the graphic below.

I call it:

The Mac Hunger Scale

Let me explain it.

To the left of 0 is hunger.

To the right of 0 is satiation.

0 is neither being hungry nor being satiated.

-4 is being really hungry.

+4 is being really full.

The Mac HUnger Scale is easy.

You want to eat when you are at a -2, slightly hungry.
You should not eat at 0 or -1.
And we do not want to be a -3 or -4 on the hunger scale.
If your hunger reaches a -3 or -4…

Your blood sugar has become low.

We will more than likely to overeat…
And we will eat too quickly…
The negative side of the scale indicates how low you are on fuel.
The positive symbol indicates how much fuel you have.
So!
How do you know when you are at -2?
You will feel a slight rumble in your tummy.
When you are at -3, you will have a lot of tummy rumblings and feel slightly light-headed.
When you are at -4, you will have lots of tummy rumblings, definitely feel light-headed,
Maybe even have a have a slight headache and be trembling.
It is important to find your -2 and to learn to have fuel readily available…
When you reach that point.
So! When do you eat? 
When you are at a -2, slightly hungry.
STEP TWO.
Now that you know when to eat…

You need to know how to eat…

You need to learn to take small bites.

AND

Chew the life out of your food.
Remember when Mom used to tell you to chew your food?
She was right again.
There are enzymes in your saliva…
That need to be infused into your food…
For proper digestion.
Without proper digestion…
The nutrients in the food…
Will not be extracted from the food.

Guess what?

If you chew your food …

You’ll supply more nutrients to your body…

And have less hunger.

When your body is low in nutrients…

Your body will fake hunger.

It’s called nutrient hunger.

You must learn to take your time…
If you eat slower…
When you have enough…
Your brain shuts down the release of the hunger hormones.
If you eat quickly…

You beat the satiation signal the brain sends…

To shut the production of the hunger hormones down.

Enjoy your food…

Take time to eat

And…

CHEW THE LIFE OUT OF IT!

STEP THREE

The next step to learn is to know when to stop eating.
You have to learn to stop eating at the +2 mark of The Mac Hunger Scale.
At 0, you are neither hungry nor full.
At +1, you are mildly satiated.
At +2, you are slightly satiated.
At + 3, you are moderately satiated.
At +4, you are severely satiated to the point of feeling ill.

+4 is what most people feel after a Thanksgiving meal.

Once you learn to stop eating at +2,
Your excess fat will begin to dissipate.
You will reach the +2 mark much sooner than you think.
In fact, Vicky and I learned that the +2 mark occurs… 
With half of the food we thought.
This led us to start sharing meals when eating out.

Menopause Recipe – Egg Mac-Muffin

You know how all I seem to ever say is veggies and meat.

What I am really saying; veggies from the list and lean clean animal protein.

Here is a recipe that will make your heart sing…

This recipe makes about 12 Egg Mac-Muffins.

  • 12 eggs (organic, free range of course)
  • A little coconut oil or grass-fed butter to line the muffin tins
  • Pinch of Himalayan or Celtic salt + Pepper to taste
  • Vegetables — Here are 3 suggestions:
  1. Tomato + Basil (1/4 cup chopped tomatoes, 1/4 cup chopped fresh basil)
  2. Spinach + Mushrooms (1/2 cup chopped spinach, 3 to 4 chopped mushrooms)
  3. Garlic + green onion (3 Cloves of chopped garlic, 1/4 cup green onion)

Pre-heat oven to 350. Lightly grease muffin tins with coconut oil or grass-fed butter.

Chop veggies.

Whisk eggs well in a large bowl, add salt and pepper.

(We recommend making all 3 recipes your first time; therefore, 4 eggs in each bowl).

(Don’t worry about egg yolks.) 

Stir in veggies.

Pour into muffin tins.

Bake for 20-30 mins, or until eggs are fully cooked through.

To really take them to the next level add some sliced avocado, tomato slices or salsa on top.

Sulphur Foods

One of the foods many practitioners do not talk about is a group of foods we refer to as the sulfur foods.

Sulfur is a natural element that is vital to optimizing one’s health.

It is one of the best liver detoxifiers that we can use.

Sulphur is also essential for maintaining youthful looking skin, effective joint motion, and a healthy digestive system.

Sulfur is the third most abundant mineral in the body.

Most of the sulfur is found in the muscles, skin, and bones.

Sulfur is found in the building blocks of proteins that make cells, tissues, hormones, enzymes, and antibodies.

Sulfur is not stored by the body so it must be continually replenished.

The one action that makes sulfur important within our protocol is that it is needed for insulin production.

If sulfur is deficient in our diet the pancreas becomes burdened.

Without insulin, your blood sugars stay high and this can eventually lead to diabetes.

Sulfur is a great mineral for both treating and preventing diabetes.

At this point in The HOPE Protocol, we are mainly interested in sulfur for its detoxification properties.

Sulfur detoxifies at the cellular level.

Sulfur is important in building and repairing cellular membranes.

Sulfur improves the elasticity of the cells, including the arteries and veins.

Sulfur improves the skin and hair because of its association with collagen production.

Collagen makes your skin and hair more flexible, softer and smoother.

Due to “The Great American Diet” sulfur had been dramatically reduced.

Due to storage, transport, processing and cooking the sulfur within our food is degraded.

Here are the foods high in sulfur that not only help with liver detoxification but also all of the benefits stated above.

As always, I recommend obtaining any mineral, vitamin or micronutrient through your food.

Cruciferous Vegetables
  • Broccoli,
  • Cauliflower,
  • Cabbage,
  • Kale,
  • Brussels Sprouts,
  • Turnips,
  • Bok Choy
  • Kohlrabi,

You may remember me writing about the importance of cruciferous vegetables and estrogen routing.

Cruciferous vegetables have a compound within them called indole 3 carbinol that is converted into DIM.

DIM is one the most important supplements for men in women with hormonal challenges.

Cruciferous vegetables are also high in sulfur a great liver detoxifier.

Protein

  • Fish,
  • Poultry,
  • Meats,
  • Nuts
  • Legumes,

Protein is essential for building and maintaining healthy muscles, skin, hair, and nails.

But it also contains sulfur.

Cysteine and methionine are two amino acids found in proteins that contain sulfur.

When we had our medical clinics, an injection of these amino acids was an important part of our protocol.

These amino acids are also important of enzymes that help improve our metabolism.

The Allium Vegetables

  • Garlic
  • Onions
  • Leeks
  • Chives

Allium Vegetables contain organosulfur organic compounds that contain sulfur.

One study in “Environmental Health Perspectives” found that the organosulfur compounds…

inhibit the formation of cancer in the esophagus, colon, forestomach, mammary glands and lungs of experimental animals.

This study indicates that allium vegetables with their organosulfur compounds are possible anticarcinogenic in nature.

Eggs
Egg whites are filled with sulfur.

Ever smelled a rotten egg–>sulfur.

Eggs play a very important part in phase ONE of The HOPE protocol.

There are a couple of cautions.

Some people have sensitivities to eggs.

If you have high cholesterol, make sure to limit your egg yolks to 4 per week.

If you do not have high cholesterol; still limit your egg yolk to one per day.

You can consume all the egg whites you want.

Some of our clients cannot or won’t consume sulfur containing foods.

A supplement that I recommend for them is MSM.

Methylsulfonylmethane (MSM) is 34% sulfur, making it the richest source of bioavailable organic sulfur.

You would have to eat a pound of garlic every day to get as much as is in a teaspoon of bioavailable MSM.

MSM is safe, non-allergenic and easily digestible as a food.

MSM is also great for the gut’s microbiome which you will learn more about in Phase Two of HOPE.

MSM is used also as a natural block against allergens.

Menopause: Fruits and Vegetables

Being overweight is not just unhealthy…

It also lops off years, possibly a decade, from your life…

 

Let me tell you a story…

It was a cold and foggy night…

I watched my son Seth’s high school team play their cross-town rivals.

Seth was the team’s starting running back…

And what a season he was having.

In this particular game…

He was having an exceptional game…

But they were losing.

There were only seconds in the game and they had just taken the kick-off.

The ball was on their 20-yard line.

They needed to go 80 yards in one or maybe two plays.

I watched as they faked a pass…

And the quarterback tossed the ball out to Seth.

He swept around the corner and ran and ran and ran…

Every step he took…

I could feel a joy…

Like liquid laughter…

It ran down my spine and into my feet.

I was running in place,

Each step he took…

I took.

Though I had played sports all my life…

I had never in accomplished what he had already accomplished.

He ran 80 yards for a touchdown.

I ran every yard with him.

The announcer screamed…

Touchdown!

Touchdown!

Touchdown!

His team had won…

I ran onto the field and he took a direct line to his Daddy.

We embraced.

The next day the newspapers had informed us that Seth had set an all time rushing record for his school.

Talk about putting a cherry on top of one exceptional accomplishment.

What would be better than that?

How about seeing my grandson do something similar.

I can see it now…

Seth running on the field to hug his child…

And then…

Seth looking into the sky…

And saying…

I wish you could have been here Dad…

The number one killer of people is?

Not heart disease, or cancer, or strokes or diabetes or Alzheimer’s…

It’s what causes these diseases.

And that’s inflammation…

Chronic inflammation is primarily caused by the food we eat…

And the toxins we absorb from our environment…

One way to determine how inflamed we are…

Is by how much abdominal fat we have.

The best way to not have abdominal fat…

Or to eliminate abdominal fat…

Is to keep your insulin levels low.

The HOPE Protocol’s fat management system…

Is all about keeping insulin levels low.

Imagine that we just had lunch.

We had a bowl of pasta.

That’s about a thousand calories of pure sugar.

Your blood sugar rises.

When blood sugar rises…

Insulin is released from the beta cells from the pancreas.

Insulin allows the sugar in your blood to pass from your blood and into your cells.

The cell doesn’t need the sugar.

You are not running a marathon at the moment.

It converts and stores the sugar as fat.

The problem is the fat gets a life sentence within the cell, because…

We eat too many calories…

We eat high carbohydrate meals…

And we snack!

High insulin levels imprison the fat.

The reason is that…

Insulin has a twin hormone.

This hormone is released from the alpha cells of the pancreas.

It does the same thing as insulin but in the opposite direction.

It attaches to the same receptor sites on the cells as insulin…

It opens the same cellular doors as insulin…

And it lets the fat out.

The problem, this hormone is released when insulin is bottomed out.

You cannot eat sugar if you want insulin to be bottomed out.

You cannot eat grains if you want insulin to be bottomed out.

You also cannot eat some fruits or vegetables…

WHAT???

Menopause hungerWhat Is True Hunger?
It always flabbergasts me when a client calls me up and says she is dying of hunger.

I have heard of people writhing on the floor for a piece of bread.

My clients will call me and tell me how they are light-headed, shaky, and sweating because they are hungry.

I’ll ask them when they ate their last meal.

They will tell me ‘at lunchtime.’

I look at my watch and it’s 4 PM.

They ate at 1 PM.

So, what is this feeling they are having?

IT’S NOT TRUE HUNGER!

IT’S FALSE HUNGER!

In most cases, it’s withdrawals from a food addiction or worse from an overeating addiction.

Then why am I trembling, light headed and sweating? She asks.

Have you ever seen someone kick heroin or alcohol? They are trembling, light headed and sweating. Yes, I know that those addictions can be a lot worse than these symptoms.

You get the point.

I can hear many of you say, I know that I am not eating enough food. I have low blood sugar.

In 35 years of practice, I have heard this weekly.

I would tell my client to go purchase a glucometer from the local pharmacy.

(I think every American should check their blood sugar at least weekly.)

They cost around $15.

I would have them check their blood sugar. Remember they are trembling, light headed and sweating. Glucometer from Amazon

I HAVE NEVER HAD ONE OF THOSE CLIENTS REGISTER A LOW BLOOD SUGAR READING!

[The only time I have seen low blood sugar readings are in diabetic clients who are eating clean and have lost weight. Their medication needs to be adjusted. It is important for every diabetic who is on medication to check their blood sugar often when eating healthy and losing weight and then with their doctor adjust their medication appropriately.]

If you are not on diabetic medication, there is a 99.9% chance that you are not suffering from low blood sugar.

One day I was walking through the living room and our teenage son was watching a television show called Naked and Afraid.

On this particular show, they ate 3 meager protein meals in 21 days.

They survived.

Yes! They both lost 20 to 25 pounds.

They also could not sleep well, they had to work hard to make shelter, and they had to hunt and gather all in the scorching heat.

Not one of these contestants has ever died.

YOU CAN GO 5 HOURS WITHOUT HAVING A MEAL, I PROMISE!

Once you get through these withdrawals, I am going to teach you even more about hunger.

In fact, the primary way you are going to keep your weight off is through a process called mindful eating.

That is down the road.

Let’s say that I decided to not eat lunch, but instead, I had a pastry.

The sugar in the pastry will cause blood sugar to rise; therefore, insulin will be released.

Insulin will remove the sugar from my blood and store it in my cells.

My blood sugar becomes lower than it usually is, NOT LOW, just lower than it usually is.

This will cause me to feel hungry.

Diabetics understand what I mean.

Let’s say a diabetic averages a blood sugar level of 250, quite common.

Normal is around 80.

When that diabetic starts taking medication and his blood sugar dips to 200, she will feel like she has low blood sugar and actually has the symptoms related to low blood sugar.

That is what many of you will feel like you have low blood sugar.

I promise you are not going to die!

You are going to live longer and with a higher quality of life.

Green Tea Extract and Appetite

One of the reasons I recommend for you to consume green tea from morning through lunch is because of its appetite suppressing qualities.

Green Tea affects your appetite.

You ask what’s the difference between hunger and appetite?

Hunger is the body telling you it needs fuel.

Appetite is your appetite hormones telling you to eat.

Your appetite hormones tell you it’s noon, it’s time to eat.

Green tea has been found to help regulate our appetite hormones.

One study found that it had a mild but significant impact on weight loss compared to a placebo.

Another study found that the reason why green tea affected weight was that it lowered ghrelin levels.

Ghrelin is the hunger hormone.

I’ll say it again. it’s all about the hormones!

I have never seen a side effect from taking green tea extract, but be on the lookout for mild headaches and increased blood pressure according to some articles.

Green tea extract is our first choice when looking for something to help with appetite induced by false hunger.

And green tea extract will improve your weight loss abilities.

Saffron and Emotional Eating

Over the last several years saffron has received a lot of attention for being an appetite suppressant.

There is an extract of saffron called satiereal, which helps with emotional eating.

If you have a difficult time not snacking, we recommend giving this a try.

One of the reasons we snack has to do with the neurotransmitter serotonin.

Snacking affects our pleasure center.

Satiereal within saffron has been shown to help with snacking by increasing our serotonin levels, which inhibits emotional eating.

This supplement needs to be taken for a few weeks before a change will be seen.

If you find snacking to be a comforting action, and you are finding it difficult to give it up, you may want to give Saffron a try.

Fiber Supplements and Fullness

We used to think that fiber provided bulk; therefore, You would be less likely to overeat.
The fiber in your intestinal system would slow down digestion and make you feel full for a longer period of time.
An article in Time Magazine found that when your gut bacteria digested fiber a fatty acid called acetate is released.
The acetate signals the hypothalamus that you are full and hunger should be turned off.

Fiber also helps flush yeast and other funguses from your body.

This helps with inflammation. The less inflamed you are the better balanced your hormones will be.

Fiber slows down the digestion of carbohydrates; therefore, controlling blood sugar spikes, which are detrimental to ketosis.
Most of you will get more than enough fiber from the greens and other vegetables within The Mac Vegetein Ketogenic Diet.
Many of you will benefit with supplementing with fiber.
If you overeat, have blood sugar problems, are suffering from false hunger, fiber supplementation will be very beneficial to you.
